easy-peezee Chicken Tortilla Soup

I threw this together tonight for dinner:

3 cans of chicken
1 can drained rinsed black beans
1-1.5 c frozen corn kernels
1 jar enchilada sauce
1tbs dehydrated onion
3 chicken bouillion cubes
enough water to cover it all (4-5c maybe)

dump it all in a pot together, cover with water, bring to a boil, then cut down and let it all simmer together for about 20 minutes. Serve with shredded cheese and tortilla chips or strips.

This was one of the quickest, easiest soups I've done in a while, and it tasted great. Hubs loved it too, but the babe wasn't impressed.

Recipe of the Day 11/9


makes about 12 servings (8x8 or 9x9)

2 eggs
1/4c oil
1/4c apple sauce, unsweetened
1.5c sugar
3/4c all purpose flour
1/2c unsweetened baking cocoa
Add nuts or chocolate chips as desired

mix well, batter will be very thick, bake at 350 for 30 minutes.

This is a good basic brownie recipe. You can use 1/2c butter instead of oil and applesauce, and get a much fudgier brownie, but not as healthy.

bad blogger

Well, I'm a bad blogger. But in my defense, having a toddler is a LOT of work! I've finished a lot of cool knitting projects, and tried several new successful recipes (humus, granola bars, sugar cookies) in the last month or so. Toddles and I also took a road trip to visit our family in TN. Busy busy! Right now I am knitting a dog sweater and about to start work on a couple of christmas presents. Here are pictures of some of my projects.
