Beef and Barely Soup

I whipped this up for lunch today oh a whim, and it was really good. Very hearty and warming on a cold snowy day. J. and I loved it, R. was more interested in the crackers. It's reminiscent of the canned stuff I had a child, but much better homemade.

1c dried barely, soaked for at least an hour in warm water, then rinsed and drained
1c frozen peas and carrots mix
beef tips or stew meat
1 potato peeled and cut into small pieces
72oz beef broth (the barely will absorb a lot of liquid)
dried onion flakes, about a tsp
red pepper, garlic, salt all to taste. I like mine a little on the peppery side
about 2 oz tomato sauce added at the end.

Combine all ingredients except tomato sauce and bring to a boil, reduce to medium heat and allow to cook for about an hour or until barely is nice and soft. Add the tomato sauce and allow to simmer for 5-10 more minutes. Makes 5-6 servings.
